I've come to the realization that through the overwhelming amount of evidence that Islam is the truth, what should I do now?

Once you realize that, then it accordingly follows to take the Shahada, which is the Islamic testimony of faith. It goes as the following:

أشهد أن لا إله إلا الله و أشهد أن محمدًا رسول الله

Transliteration: "Ash-Hadu An-La ilaha illa Allah Wa Ash-Hadu Anna Muhammadan Rasool Allah"

English: I bear witness there is no lord worthy of worship except God and that Muhammad is his messenger.
